PROCESSING
The Lady factory supports wet processing, and other processing – naturals, honey and innovative techniques such as anaerobic fermentation, yeast fermentation, and CO2 pumping.
Our factory ground is 2.5 ha in size. It is fully equipped with over 100 tanks, pulper, moisture meter, refractometer, pH meter, thermometer, sample roaster, sample huller, sample sizer, small scale dry mill, and small scale sizer.
We aim to get the best coffees in Myanmar by mastering different processing styles, considering origin (soil, climate) and varieties.
We lay the beans out to dry in the sun on our 150+ purpose-built tables, until they reach 11% moisture. To ensure consistency, the beans are turned and covered with shade cloths in the heat of the day to prevent any sun damage.
COFFEE WASHING STATION
Our coffee washing station (CWS) is in Ywa Ngan, on the edge of an old British hill station. It is convenient and central with water and energy, no more than 10 km from the furthest farmer. It is essential that the CWS is easy for farmers to access given the perishable nature of the coffee cherries.
The CWS is a hive of activity. The red cherries are delivered by small Chinese tractors and trucks. All coffee is weighed and recorded with the farmers’ name and volume. We provide premium prices for premium coffee as an incentive, about three times the local cherry rate.
At the factory, 95% of the staff are women. Women are naturals at growing specialty coffee, as it is delicate work that needs a lot of patience. We are fully equipped for wet processing, and other methods.
During harvest, our CWS starts as the sun rises over the distant mountains. Our workers are mostly from the city, others come in from surrounding rural areas. We provide accommodation.
The day starts with mediation for spiritual wellness, which manages stress and unites everyone in a peaceful way. We have a dedicated building with lovely sunlight streaming in. It is uplifting for all. The women really like this approach and we have done it for over a year.
